What inspired you to start your company?
I graduated from the prestigious Culinary Institute of America in 1997. Since then I have been working as a private chef and caterer. After 20 years, I have been lucky to see my business grow to the point where I needed my own space. Drake + Wolf is the culmination of years of hard work, building relationships and establishing a reputation as the “go to” for high end kosher food.
When did you start the business?
Earlier this year, I stumbled upon a small gem in the heart of The Upper East Side. I wasn’t looking for a new kitchen, but I immediately fell in love with the space and decided it was time.
Which menu items are the biggest sellers?
Thats the first question I get asked, and my response is ” my menus are like children, there is no way to choose a favorite.”
It depends on who you ask. Every client has their favorite menu item. My best sellers are my Short Ribs, Brisket and of course the most Decadent Chocolate Mousse.
Who creates the recipes?
I oversee every detail of an event — from recipes to menus and from linens to staffing. I do it all, from soup to nuts — literally. With the help of my amazing team, it’s all about giving the client what they want. I believe what sets D+W apart from other companies is the comfort of knowing that my hands touch every element of the event, big or small.
Why go Kosher?
I learned to cook from the best kosher chefs in the world — my mother and my grandmothers. I want to share my traditions with as many families as I can.
Why National Kosher Supervision?
I have been living on the Upper West Side for 20 years, and I love the idea of supporting and being supported by the local community. Rabbi Mehlman has been a great resource for me and an even greater supporter of D+W.
Any advice for someone looking to start their own food business?
My advice to anyone getting into the food business can be summed up in this great old quote from Julia Child: “The main thing is to have a gutsy approach and use your head!”
